A rich variety of spicy sauces are served with meat, fish, poultry and all kinds of vegetables. Pepper, ginger, onions and chilli are most commonly used, with ingredients such as peanuts, palm oil and tomatoes featuring, too. A hot sauce is frequently served separately so that those who like it hot are not disappointed.
